Track Fire

This was last week during the Track Fire in Raton..Burned 27,000 acres!

T.G.I.F

TGIF..

I am so thankful it is finally Friday.

Traci has a yard sale tomorrow to raise money for her FCCLA trip..I am afraid we are still a distance from her goal, but have faith that we might reach it. She leaves July 8th for California!!!

It has been a long week here in Maxwell. Seems each time you clear one hurdle, two more pop up to take it's place.

We had unbelievably hot temps here in New Mexico. I heard today that New Mexico is ranked number one in drought conditions, I believe that they are right! It is soo very dry here. The village has had to issue Firework bans and so have some area's close by. We really need some rain and lots of it.

My little sister is getting married next month. I ask for prayers. I will not go into detail, I just will leave it at that.

Next Friday we head to Santa Fe, as Christina has a little bead or earring back in her ear and that is the closest ENT doctor around. Should make for a long day, as we have to be in Santa Fe (150 miles away) by 8:30 in the morning!!

Okay, it is almost my lunch time and I need to go help the girls with the SOY lunch program..

I will pop back in later on...........

Chinese Chicken Salad

Cabbage 1 head shredded

Green onions 6 sliced

Put above ingredients in large bowl.

¼ c. butter melted in frying pan

Sliced almonds ¼ small pkg.

Sesame seeds ½ c. or substitute sunflower seeds

Chicken Top Ramen 1 pkg. crushed with the seasoning

In frying pan brown the above ingredients slightly. Allow to cool, then keep separate until ready to serve.

Dressing:

½ c. vegetable oil, 1 Tblsp. Soy sauce, ¼ c. white vinegar, 1/3 c. sugar (may add sesame seed oil about 1 Tblsp.)

Mix dressing in separate container until ready to serve salad.

When ready to serve mix fried ingredients and dressing with cabbage. If you are not going to use entire salad, may spoon small portions and keep ingredients fresh for several days.

Enjoy! I received this salad from a friend almost twenty years ago and we’ve enjoyed it ever since.

Once again finds me trying to stay up with my blog..
I believe that I need this account to maybe help me share and stay in touch with friends and family..
I am going to try to get on here once a week at least and update each of you about our family life. I might even add some recipes and share some prayer needs..
Watch and you shall see..
